What can I say? I grew up in a large Italian family in a predominantly Italian New England town, where food was central to everything we did as a family. I was fortunate enough to have been born into what I think of pizza mecca in the states. My love for pizza started with my Great Aunt Clotildas home made pizza when I was just a child. From there my pizza journeys brought me to some of the best pizzerias in the country, including the ubiquitous apizza (pronounced “a-beetz”) from Wooster Street in New Haven, CT and pizza from in and around NYC with their massive coal fired brick ovens. In 1994, work brought me to North Carolina, and soon thereafter began my pizza withdrawals. I searched high and low for the taste of pizza I had come to know and love, but I was unable to find anything comparable to what I knew as great pizza. My insatiable craving led me on a journey of discovery of the craft of making pizza. Essentials like the right flour, natural leavens and mixing techniques to high heat masonry ovens and sourcing local high quality ingredients. There was a lot of trial and error along the way, but this 20+ year journey has culminated in my ability to make, what I consider to be great pizza.
